So I should have taken a picture of this salad yesterday right after I made it when it looked it’s most beautiful, but I was too hungry to waste any time!
This picture from today’s leftovers does not do this salad justice! Roasted sweet potatoes with black beans, corn, green onion, bell pepper, avocado and this amazing honey mustard dressing is so dang yummy! It’s the perfect summer to fall transition lunch with those roasted potatoes. Here’s the recipe!
