Kicked Up Ramen Noodle Salad

You know that crunchy ramen noodle salad right? The delicious one with cabbage and crunched up ramen noodles that’s served at every potluck? I love it, but I’ve found a new recipe that I love even more. It’s so good that I dream about it. So good that I eat it for lunch AND an afternoon “snack”. So good that I risked a crying episode from my baby in the aisles of Walmart to run and get the ingredients today. So good that I made it as fast as I possibly could so I could devour it before Emmett woke up. 

This recipe from Gimme Some Oven takes the traditional salad and makes it a little healthier. Plus it adds amazing ingredients like avocado and mango which put it over the top! 

   

Her recipe calls for edamame, but I leave those out because I just don’t care enough about them. In my opinion, this is the perfect thing to eat now that it’s getting warmer out! Fresh, fruity and light. Num num num…
