A Weekend of Firsts in Clearwater

Good morning! Hope you slept better than I did last night (thanks Emmett)! I think he might of had a hard time falling asleep last night because: 

A. We weren’t in relaxing Florida anymore

B. He slept all day in the car.

One bad night of sleep from him was way worth it though because we had an amazing weekend with Grandpa Jim and Grandma Barb in Clearwater! It was a long weekend full of sunshine, humid weather, family, and a lot of firsts! 

1. Emmett’s first road trip!

It was about a 7.5 hour trip and overall our baby did really well. He would have moments of fussiness but mostly he just slept. 

2. Emmett’s first time meeting Great Grandma Helen

It was so sweet – he slept for most of the visit but woke up when we got to her room. People sure do go nuts for cute little babies at the nursing home! One nurse called Em “juicy” lol

Not just any shoes. The CUTEST shoes!

4. Baby’s first time swimming in the pool


He didn’t love it at first (Dad dunked his head under water) but once he got used to it, he held onto Ryan and kicked his little legs!

5. Mom and Dad’s first date night out!

We borrowed the convertible and headed to St. Pete for dinner and a little bar hopping. Thanks Grandma and Grandpa for babysitting!

The ocean felt like bath water it was so warm!

In between all of these big events, we also did a lot of relaxing…


And Emmett got to spend lots of quality time with his grandparents.

Tabouleh Salad

I have to tell you about the lunch I just made. But first I have to tell you about what inspired it. When my mom was here, the three of us (me, my mom and Emmett) met Becca for lunch out our favorite Greek place: Papa ZuZu’s. It was a memorable lunch for lots of reasons, flying tzieke and baby poop all over my white tank being two of them, but also memorable because of being able to spend a fun hour with my mom and sister eating delicious Greek food. I had a gyro and tabouleh salad which was so fresh, light and yummy that I thought, “why don’t I eat this more??”

Enter this weekend when I bought this:

I used this box mix as my base and added a bunch of fresh ingredients so it would resemble what I had for lunch that day. Here’s how I made it:

1. Cook the grain according to the box, which involves mixing the contents of the box together (spice pack too) with a cup of boiling water. You then cover it and stick it in the fridge for 30 minutes. 

2. Once the half an hour was up, I mixed in:

-red bell pepper


-a few chopped mint leaves

-a can of chickpeas

-red onion

-feta cheese

-fresh lemon juice

-about 2 tablespoons of olive oil 

I let it sit in the fridge for about an hour for everything to meld together and the result was even better then I thought it would be! 

This would be such a great lunch to pack and take to work with you because I think it would just get better the longer it sat in the fridge. Or this would be great to bring to a potluck too! Or if you celebrate Meatless Monday. Or if you just want to pretend you are at Papa ZuZu’s, minus the baby poop 🙂 

The Most Special Quilt

My Grandma Barb is not only the best cook, but she makes amazingly beautiful quilts – and I’m not just saying that because I know she reads my blog now 🙂 Hi Grandma! 

She made the most special baby quilt for Emmett that my parents delivered when they were here last week. It goes perfectly with his nautical nursery! 


We play on it every day too!



Our wiggly little guy loves laying on his back and kicking his legs or being on his tummy working on his push-ups!  

Kicked Up Ramen Noodle Salad

You know that crunchy ramen noodle salad right? The delicious one with cabbage and crunched up ramen noodles that’s served at every potluck? I love it, but I’ve found a new recipe that I love even more. It’s so good that I dream about it. So good that I eat it for lunch AND an afternoon “snack”. So good that I risked a crying episode from my baby in the aisles of Walmart to run and get the ingredients today. So good that I made it as fast as I possibly could so I could devour it before Emmett woke up. 

This recipe from Gimme Some Oven takes the traditional salad and makes it a little healthier. Plus it adds amazing ingredients like avocado and mango which put it over the top! 


Her recipe calls for edamame, but I leave those out because I just don’t care enough about them. In my opinion, this is the perfect thing to eat now that it’s getting warmer out! Fresh, fruity and light. Num num num…

Two Months

Guess who is two months old today? 


Our big, smiley baby loves swinging in his swing, eating, “cooing”, bath time, farting, and farting while taking a bath!

The past couple weeks have really started to bring out his sweet personality and I am more in love with him then ever! I think I kiss those cheeks at least 100 times a day. We can’t wait to see what changes the next month brings!

I’m so thankful to have you as parents and loved seeing you as grandparents. Emmett is one lucky boy! 

Mom Hair

I think before you have kids there are a couple things you proclaim: 

1. “I will never drive a mini van!”

2. “I will never cut my hair short just because I have a kid!”

Well people…I cut my hair yesterday. But in my defense, it wasn’t just because my baby was pulling on my long hair and it was getting in the way when I was leaning over to change his diaper. It’s also getting super humid here and I needed a change. So there. But I am NOT getting a mini van. Yet…



The Best Easter

Happy Easter! I hope you had as great of a day as we did. It’s funny to think that last Easter Ryan and I were alone by ourselves in Columbus, getting ready to move to Charleston. Now, we are here with a baby boy, celebrating with a house full of family. It’s amazing what a difference a year makes! 

We started off our morning by waking up early to see the sunrise at Folly Beach. Church was held out on the pier and it was an absolutely beautiful way to start the day!



We came home and got ready for our brunch by making our favorite egg bake, homemade cinnamon rolls, fried potatoes and a ham complete with pineapple rings. Of course no brunch is complete without mimosas…


And bloody Mary’s…


 Even though Emmett won’t remember it, it’s so fun to celebrate a holiday when you have a kid! To commemorate, we took one zillion photos 🙂









 We also played a little croquet…


Watched home movies, and went back to the beach to see the sunset.


 Just the most perfect, fun, beautiful, yummy day!  

Baby’s First Real Beach Day

It was about 80 degrees here yesterday and absolutely beautiful (and my parents are in town!) so we packed up all of our gear and headed to Folly Beach for a couple hours. Everyone else seemed to have that idea too because Folly was hoppin’! We’ve taken Emmett to the beach plenty of times since he’s been born but he’s always been strapped in the ErgoBaby. Yesterday was the first time we put his little toes in the sand and the water!



He was wide awake the whole time and loved laying on the blanket under the umbrella. No trip to the beach would be complete without a diaper blowout but even that was funny and memorable! Such a perfect afternoon!
