First of all, thanks for all of the nice comments on the nursery! We took our last class last night at the hospital (Newborn Basics, haha) so now we are just playing the waiting game.
When I was little I would inhale shrimp. Just loved it! Popcorn Shrimp from Red Lobster anyone? Unfortunately, my love for shrimp dampened as I grew up a little and was suddenly grossed out by the thought of these little shrimpies swimming around in the ocean. Dumb I know, but the good news is that I rediscovered my love a couple years ago – just in time to move to the coast!
I’ve tried all sorts of versions of shrimp and grits since moving down here and I doubt I’ve had a bad one! But when Ryan decided to tackle a homemade version a couple weeks ago, I can honestly say that it was as good, if not better, than any shrimp and grits I’ve had in a restaurant!
We obviously have access to fresh, local shrimp here but if you don’t, just make sure you don’t buy precooked frozen shrimp (I’ve definitely done that more than once living in Ohio. Dumb dumb). Here’s the recipe that he used. If you come visit us, there’s a real possibility that this will be your welcome dinner. If you can’t wait, maybe make it this week and pretend that the snow falling outside is actually ocean spray.
