Crispy Gnocchi with Zucchini and Sweet Corn

Hallelujah! We finally made a real, bonafide, home-made meal Monday night in our new kitchen. We still haven’t unpacked most of our kitchen, but I had enough to work with so I made one of our absolute favorites – Crispy Gnocchi with Zucchini and Sweet Corn from Iowa Girl Eats

I used to dislike gnocchi. It always seemed to stick to the roof of my mouth and I didn’t like how it didn’t have much texture to it. However, gnocchi is one of Ryan’s favorite pastas so being the sweet wife I am, I looked for gnocchi recipes we could make at home. What makes this recipe one of our favorites is how you cook the gnocchi – instead of boiling the pre-made gnocchi in a pot of water, you simply sautee it in olive oil in a pan. It cooks the gnocchi and crisps it up in the most perfect way!

I won’t rehash the recipe (check out the link above to get it), but all you need to know is that this recipe is fresh, easy, requires only a few ingredients, and it makes you feel good about getting some veggies into your diet.
