UGH, Monday right? But one more Monday down means we are that much closer to the big move! It’s a rainy night in Columbus which I pretty much love. It makes our house feel so cozy and all I want to do is snuggle up with my boys. Here’s the view out our front window tonight.
A cold rainy night also calls for something warm and creamy for dinner. Tonight that meant a hashbrown, ham and cheese casserole.
Um, is it bad that we ate the entire pan? I swear that I made a half-recipe and the casserole wasn’t that thick…I swear. Here’s the original recipe, but I kind of made mine up, since I was just workin’ with what we had. Half a bag of hashbrowns, a couple dollops of sour cream, 3/4 a can of cream of chicken, about a cup of shredded monterrey jack cheese, cubed ham, and some green onions. Mix them in a bowl all together, add some salt and pepper and throw them into a pan that’s been sprayed with cooking spray. Bake at 350 for 45 minutes. I also broiled ours for a little while longer to get the top crispy.
Mmmmm…this one warms the soul!
